Baked Oatmeal

I’ve mentioned before that every Friday is date night for my parents. And for as long as I can remember date night has always been the perfect occasion for 7 siblings to make something out-of-the-ordinary, and incredibly delicious for dinner! Something like pancakes, waffles, jelly pancakes, or… oatmeal bake! We measure, mix, and make a HUGE mess… and then we all work together to clean it up again!

It makes perfect sense to have plenty of fun fixing dinner on Friday night, because it’s also the night that we do “clean-up checklist” and make sure the house is in perfect order for the weekend {not like we don’t always have the house orderly and tidy anyway 😉 … but Saturdays are for family projects, and Sundays we host a Bible study gathering here in our home}.

So here’s one of our favorites. We’ve been enjoying this recipe for more than 10 years of date nights {back when “big sisters” came from the farm down the road to babysit us}… 🙂


Baked Oatmeal

1 cup Sunflower (or Vegetable) Oil

1/2 cup raw Honey

4 Eggs

6 cups Quick Oats

2 teaspoons Sea Salt

4 teaspoons Baking Soda

2 cups Milk

2-3 cups fresh or frozen Fruit (we often use a combination of Strawberries, Peaches, Blueberries, or Apples)

Combine all ingredients together in a large mixing bowl. Pour (and spread) into a greased 9×13″ pan. Bake at 350 degrees for about 35 minutes – or until the pan is set and a toothpick or knife inserted comes out moist (but not like soggy or raw batter/dough).

Serve with Milk, Honey, Maple Syrup, Fruit Syrup, Jam, or whatever else you like… Milk and Honey or Syrup are a personal favorite.
