No-Bake Healthy Peanut Butter Apple Munchies – Gluten, Dairy and Sugar Free

IMG_4521.JPGI love experimenting in the kitchen … making up new recipes has always been a favorite. But so much the more when your family is on an extended restrictive diet or cleanse. Some of these have lasted for months {oh joy} – thankfully our current cleanse is only for a month. Fresh meat and vegetables + a little raw dairy and some fresh fruit can be delicious – it’s amazing how creative you will get with the same simple list of ingredients.

A few of us have become rather desperate for something sweet. 😉 Not all of us enjoy the little carob coconut treats we are allowed to have on occasion … so the search for something with peanut butter became the topic of talk around the lunch table. Who doesn’t love peanut butter. 🙂

Okay, well these are definitely not the same as our favorite peanut butter balls! And they are a far cry from dessert. But they are amazingly tasty for what we’re allowed to have. And when you’re 11 days into a restrictive cleanse, they taste pretty fabulous. ❤

No-Bake Peanut Butter Apple Munchies

1 {16 oz} jar natural crunchy peanut butter – our absolute favorite is Crazy Richards brand.

1 Apple {a sweet, slightly tart apple such as Pink Lady or Honey crisp works best for this recipe}.

1/4 cup unsweetened coconut flakes

1/2 cup almond meal / almond flour – I get one that is less fine, more like meal, from Trader Joes

1/2 cup flax powder

1/4 cup honey

Combine all ingredients. Use a cookie scoop to place balls onto a cookie sheet, or spoon into mini muffin cups. Place in the freezer for several hours or overnight. Enjoy as a snack or sweet treat.

** More recently I’ve added 1/3 cup plain organic yogurt + an additional 1/3 cup peanut butter + 1/4 cup flax powder. If you can have a little dairy this makes a fun version of the recipe.
